This meal was inspired by Diethood. We made a few changes to fit our taste and pantry — we used chicken breast instead of thighs, garlic powder instead of minced garlic, chicken broth instead of stock, and we skipped the cabbage, toasted sesame oil, carrots, and green onions.

Ingredients for the Chicken

  • 2–4 boneless, skinless chicken breasts, cubed (or use thighs for a juicier result)
  • 3 tbsp soy sauce

Ingredients for the Sauce

  • 1/4 cup oyster sauce (it doesn’t taste like seafood – trust me!)
  • 2 tbsp hoisin sauce
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 4 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp garlic powder
  • 2/3 cup chicken broth
  • 2½ tbsp cornstarch

Tip: Use low-sodium soy sauce for a healthier version. Add crushed red pepper flakes if you like heat!

Ingredients for the Noodles

  • Lo mein noodles (or substitute spaghetti or ramen noodles if needed)

How to Make Chicken Lo Mein

Step #1: Marinate the Chicken – In a bowl, add cubed chicken and soy sauce. Let it marinate for 15–30 minutes while you prep the rest of the ingredients.

Step #2: Make the Sauce – In a separate bowl, whisk together oyster sauce, hoisin, soy sauce, honey, sesame oil, rice vinegar, garlic powder, chicken broth, and cornstarch until smooth.

Step #3: Cook the Noodles – Boil water and cook lo mein noodles according to package instructions. Drain and set aside.

Step #4: Cook the Chicken – In a large skillet over medium-high heat, add a drizzle of oil. Cook the marinated chicken for 5–7 minutes until golden brown and cooked through.

Step #5: Combine and Serve – Add the cooked noodles and sauce to the skillet. Toss to combine until everything is evenly coated and warmed through. Serve immediately with garlic bread or steamed veggies.

Storage & Reheating Tip

Store leftovers in an airtight container or Ziploc bag in the fridge for up to 4 days. For best results, reheat in the microwave or in a skillet over medium heat until warmed through.
