  • 16 oz elbow macaroni pasta
  • 2 tbsp butter (we used whipped butter)
  • 2 tbsp flour
  • Pepper, to taste
  • 1 1/4 cup milk
  • 1 1/2 cups shredded cheese of your choice (we used a Mexican blend), divided
  • 1/2 cup buffalo sauce (we used a healthier version with avocado oil)

How to Make Buffalo Chicken Mac and Cheese (Step-by-Step)

✓ Step #1: Prepare the chicken – Add one large chicken breast to a slow cooker with 2–3 cups chicken broth, paprika, and pepper. Set on high for 3–4 hours until the chicken shreds easily. Keep the lid closed and set aside until ready to use.

✓ Step #2: Cook the pasta – Bring a large pot of water to a boil and cook the elbow macaroni according to the package directions. Drain and set aside.

✓ Step #3: Make the roux – In a saucepan, melt 2 tbsp of butter over medium-high heat. Stir in 2 tbsp flour and cook for 1–2 minutes until golden. Slowly whisk in 1¼ cups milk and stir for 3–5 minutes, until thickened. Season with pepper.

✓ Step #4: Add cheese and combine – Stir in ¾ cup of shredded cheese until melted. Mix in ½ cup buffalo sauce and the cooked macaroni. Pour into a greased baking dish or pan.

✓ Step #5: Add the chicken – Spread the shredded buffalo chicken on top of the mac and cheese. Preheat the oven to 350°F.
