To me, baked chicken tacos are an upscale version of regular tacos. They are crunchy, the chicken is tender, the taco seasoning and sour cream combine together to make it flavorful and creamy, and with only six main ingredients, this will be one of the easiest taco dinners you will make.
I cooked the chicken and taco seasoning in a crockpot in the late morning, and by dinnertime, the tacos were ready to assemble. I rated these tacos a 9/10 and Jace rated them an 8.5/10. We are huge taco fans around here!

What I Learned
My suggestion is to hold the tacos together with toothpicks. Since the corn tortillas are small, they don't lay flat like a bigger tortilla would. I used two toothpicks per taco—one at the top and one at the bottom. Next time I will be using three to fully secure them during baking.

- *1 packet of less sodium taco seasoning
- 2 cups water
- 1/2–1 cup cheddar cheese
- 4–6 tbsp light sour cream
- 1–2 boneless skinless chicken breasts

How to Make Baked Chicken Tacos (Step-by-Step)
✓ Step #1: Slow cook the chicken – In a slow cooker, add the water, chicken breasts, and taco seasoning. Cook on high for 3–4 hours, or on low for 5–6 hours.

✓ Step #2: Prepare your tacos – Wrap tortillas in a damp towel and microwave for 30 seconds. On a sheet pan lined with parchment paper and sprayed with cooking spray, lay out the six tortillas.
