Stovetop Blackened Chicken Tenders

Image
Blackened Chicken I don't recall ever making a blackened chicken recipe before. This recipe had a mild spice which was tolerable (I'm not a big spice person but the spice level we rated a 4/10) but the meal itself was a 10/10. If you are looking for tender chicken that is flavorful and not tough, this is the recipe for you. With only four ingredients, this chicken recipe is simple, savory, with a light crisp on the outside. It is a perfect meal to make during those busy weekdays.  • Difficulty Level: Easy • Serving size:  3 • Total cook time:  10-15 minutes • Total prep time:  5 minutes • Family friendly:  Yes, all three of us devoured our plates! • Rating:  10/10 •  Serving suggestions: Corn on the cob, white rice, green beans, baked beans, and garlic bread Why You Will Love This Blackened Chicken Recipe This chicken was surprisingly tender. Ours was frozen so we did have to change up the cook time, but it was perfectly soft inside. I have never had a...

Beefaroni

Image
Beefaroni Beefaroni is a staple in our home. Kevin loves Beefaroni probably more than any of us and requests it quite often. This meal is the true definition of a comfort meal. It's simple, cheesy, tender, and full of flavor.  The pasta was perfectly cooked and tender, the cheese was stringy and gooey, and the ground beef was soaked in the garlic powder, onion powder, paprika, and Worcestershire sauce. Top it off with some Italian seasoning and you have the perfect dinnertime meal. • Difficulty Level:  Intermediate • Serving size:  5-7 • Total cook time: 20-30 minutes • Total prep time: 5-10 minutes • Family friendly:  YES! All 3 of us love this meal • Rating: 9/10 Why You Will Love This Beefaroni This pasta recipe is super simple because you only need one pot to cook the macaroni and one pan to cook the beefaroni so clean-up is a breeze! The ingredient list may look intimidating but it's really not. The meal itself is really easy to make once you gather all o...

Sausage Cajun Pasta

Image
Sausage Cajun Pasta Today is Labor Day and what I want to know is this - is blogging considered work? What if I enjoy it? Blogging and writing have always been my passion but I did tell myself I wouldn't work today so let's not count this as work.  I don't make homemade meals as much as I used to - between homeschooling my son and working, it's already a lot on my plate. I'm lucky sometimes if I have time or the energy to workout, let alone make a delicious dinner for my family. But I have to say, this is one meal that I will be making again and I'm glad I made it. This Sausage Cajun Pasta is a little spicy - I don't like spice so this was perfectly spiced. It was creamy, filling, flavorful and decently easy to make. Jace and I rated this a 9/10.  • Difficulty Level:  Intermediate • Serving size:  5 • Total cook time:  20 minutes • Total prep time: 5-10 minutes • Family friendly:  YES we all customized ours and enjoyed it  • Rating: 9/10 Why You Will L...

Three-Cheese Air Fryer Macaroni and Cheese

Image
Three-Cheese Macaroni and Cheese There's something special about waking up before your household, making yourself a nice, cold coffee that provides energy needed to start your day. Since I started homeschooling my son last week, I have made an effort to wake up at least 30 minutes before the household. It actually feels good to have some alone time and check some items off the list.  Although today is Sunday, I decided to continue my tradition - this time giving you a blog based around the dinner we made last night.  Jace (my son) requested a homemade macaroni and cheese dinner and since our oven is out-of-commission, we resorted to an air fried version.  Jace shared some words to describe this meal and we came up with cheesy, crispy, browned, creamy, soft on the inside, crispy on top, and delicious enough for seconds. He is taking cooking and has helped a lot with making dinner, learning about techniques, and being hands-on. He loves it. • Difficulty Level:  Interme...
