You can taste every single layer - from the crunchy M&M's on top, to the creamy butter in the middle and the flaky oatmeal at the bottom. The chocolate is swirled in the middle to add a sweet, decadent flavor. Not one layer dominates the other. Even though they are frozen, the layers are soft, with a little bit of crunch.

- Although we didn't add peanuts, feel free to adjust toppings according to your preferences

Ingredients for No-Bake Oatmeal Peanut Butter Cups

- 2 cups *Quick oats
- 1/2 cup Honey
- 1/3 cup + 1/2 cup *No added sugar peanut butter
- 6 oz. + 1/4 cup Ghiradelli no added sugar mini chocolate chips (I get these from Albertsons)
- 2 tsp + 1 tsp *Coconut oil
- Mini M&M's, to top
How to Make No-Bake Oatmeal Peanut Butter Cups (Step-by-Step)
✓ Step #1: Make the first layer - Spray a muffin tin with PAM or baking spray. Make the oat layer by adding the 2 cups of quick oats, 1/2 cup honey, and 1/3 cup peanut butter. Stir ingredients until combined. Scoop 1-2 tbsp of oats into the bottom of each muffin tin cup and press them into the cup to make little bowls.
Note: If it's too dry, you can add water. I didn't need to add water for ours.
✓ Step #2: Melt chocolate – In a small bowl, combine 6 oz of chocolate with 2 tsp coconut oil. Heat in 30 second increments, until the chocolate is melted. Stir and add to each oatmeal cup. Place the muffin tin the freezer for 5 minutes while you make the next layer.
✓ Step #3: Make the peanut butter layer – This one may get a little messy which is fine. Add the remainder 1/2 cup peanut butter with the remainder 1 tsp coconut oil in a bowl and microwave for 15 seconds. Stir. Add 2 tsp of the mixture on top of the chocolate layer.
If the chocolate isn't all the way frozen, you may have a harder time doing this like I did. Feel free to freeze for 5-10 additional minutes if needed.
✓ Step #4: Add M&M's – top the peanut butter and chocolate mixture with M&M's and freeze for 30-60 minutes.
