Recipe inspiration came from DietHood. I did adjust this recipe to my families liking. We used half the original size chuck roast, no onion powder (we are out), garlic powder instead of garlic, and no green chilies or Adobo.

How to Store and Reheat
Fridge: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave for 2-3 minutes, until warm.
Freezer: Store it in a freezer-safe bag for up to 3 months. Thaw overnight in the fridge before reheating.
Adjust to Your Liking
• You can swap out the chuck roast for pork shoulder or chicken thighs
• You can swap out garlic powder for minced garlic
• You can add onion powder or actual onion slices for more flavor
• Feel free to swap out the oregano and bay leaves for other seasonings of your liking
• If you like it spicy, you can add in the green chilis, chipotle peppers in adobo sauce, cayenne pepper or red pepper flakes for extra heat
• Don't have a crockpot? No problem! You can cook this in an Instant Pot or slow-simmer on the stovetop for 2-3 hours

• 1.5 pound chuck roast (if you have more than two people, you can double the serving size)
• 1 Tbsp garlic powder
• 1 Tbsp ground cumin
• 1 Tbsp dried oregano
• 1 1/2 tsp salt
• 3/4 tsp pepper
• *1/2 cup beef broth
• 2 Tbsp Apple Cider Vinegar
• 1 Tbsp lemon juice
• 5-10 bay leaves
Step-by-Step Instructions
✓ Step #1 Add the chuck roast to the crockpot
Add the chuck roast to the crockpot. Don't turn the crockpot on quite yet.
✓ Step #2 Add seasonings
Add garlic powder, ground cumin, oregano, salt, and pepper to the chuck roast.
✓ Step #3 Mix the liquids
In a small bowl, mix together beef broth, vinegar, and lemon juice.
✓ Step #4 Cook
Pour broth mixture over the ingredients in the slow cooker. Add bay leaves and cook on low for 6 hours or high for 3-4.
✓ Step #5 Shred and serve
Shred with two forks and it should fall apart easily. You can add it to a tortilla or eat by itself. Pair with guacamole, pico de gallo or cilantro lime rice.
