I've reverted back to making homemade meals, although I love Hungry Root and will continue using them bi-weekly. Today we made an easy family dinner recipe. I don't typically make casseroles but this potato casserole was enjoyed by Jace and I.

We made the potatoes in the Air Fryer beforehand so they added a crisp and a delicious herb flavor from the seasoned dill. Our household uses the Air Fryer 3-4x per week. I love that it adds an extra crisp to meals without all of the extra calories and it doesn't involve frying. It's a very light way to make a meal more flavorful and crispy.

This casserole recipe is interesting because you cook the potatoes and chicken separately and then combine them together in the end. The crispy potatoes add a satisfying crunch, while the creamy Alfredo sauce perfectly coats the tender chicken, creating a balanced and indulgent bite.

This casserole quickly became a family favorite after a particularly busy week of basketball practices. It was easy to prep, and Jace loved the combination of crispy potatoes and creamy Alfredo sauce. Plus, it was quick enough to make even with a packed schedule!

This recipe was inspired by Cook it With Tim, but I made a few changes to suit our family’s taste. I love making these small adjustments! I never add salt in our recipes. Kevin has chronic kidney disease and high blood pressure so I typically omit the salt when possible.

I added a dill weed seasoning and smoked paprika in our potatoes. We are currently out of olive oil and vegetable oil so I used PAM cooking spray as the oil. Instead of using oils like vegetable or olive oil, I found that PAM cooking spray works really well in the air fryer, giving the potatoes a perfect crisp without adding extra calories or fat.

For the chicken we didn't use minced garlic and I replaced Garlic Parmesan Sauce with Garlic Alfredo Sauce. If you like spice, you can add red pepper flakes or cayenne pepper.

Feel free to get creative with veggies! Consider adding sautéed mushrooms, spinach, bell peppers, zucchini, or roasted garlic—either cooked alongside the chicken or mixed into the casserole before baking.

Ingredients for potatoes:

• 2 medium Russet potatoes, peeled and diced (you can use any potato for this)
• 4 tbsp PAM cooking spray
• *1 tsp dill weed seasoning (This seasoning elevates the flavor of the potatoes and adds a fresh, herbaceous touch. Dill weed adds a lovely, herby note to the potatoes, but feel free to use your favorite seasoning blend if you prefer.)
• 1 tsp pepper
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp smoked paprika

Note: The dill weed seasoning and smoked paprika are optional but highly recommended for added flavor and aroma!

• 3 chicken cutlets, cubed
• 1 tsp garlic powder
• 1 tsp pepper
• 1 tsp onion powder
• 1 tsp smoked paprika
• 2 tbsp butter
• 1 cup shredded Mozzarella cheese
• *1 cup Garlic Alfredo sauce

How to Make Alfredo Chicken Potato Casserole (Step-by-Step)

Step #1: Preheat air fryer – Spray the air fryer with 2 tbsp PAM spray and preheat to 400°F.

Step #2: Prepare the potatoes – Peel the potatoes and cube or slice them. Place them in a bowl.

Step #3: Spray the potatoes – Spray the potatoes with cooking spray to help the seasonings stick.

Step #4: Add seasonings – Add dill weed, pepper, garlic powder, onion powder, and smoked paprika to the bowl.

Step #5: Coat potatoes in seasonings – Mix and toss the potatoes until they are evenly coated.

Step #6: Cook – Air fry the potatoes at 400°F for 20 minutes, flipping halfway through.

Step #7: Prepare the chicken – While potatoes are cooking, cube the chicken and season with garlic powder, pepper, onion powder, and smoked paprika.

Step #8: Cook the chicken – Spray a skillet and add butter. Sauté the chicken over medium-high heat for 3–5 minutes until cooked through.

Step #9: Combine the chicken and sauce – Add Garlic Alfredo sauce to the chicken and cook for 3–4 minutes more.

Step #10: Prepare the casserole – In a baking dish, add chicken and sauce, top with air-fried potatoes and shredded mozzarella, then bake at 375°F for 15 minutes or until cheese is melted.

Storage & Reheating Tip:

Store leftovers in an airtight container in the fridge for up to 3 days. For the best results when reheating leftovers, microwave for 2 minutes or until warm. You can also pop it in the oven at 350°F for about 10 minutes to get that crispy texture back.

Freezing Tip:

After assembling the casserole (before baking), allow it to cool. Then wrap tightly in plastic wrap or aluminum foil, place it in an airtight or freezer-safe container, and store for up to 2 months. To avoid mushy potatoes, undercook them by about 10 minutes before assembling.
