Chocolate Peanut Butter Bars
Chocolate peanut butter bars are nostalgic for me. I remember being in the elementary school lunchroom and being handed a bar. The bars were spread out on a huge plate and cut into individual pieces.
History Behind the Lunch Lady Bars
Now I know those bars back in the 90's probably didn't have the best ingredients in them so I decided to make a healthier version of the same bars. I have made these bars twice in the past few weeks. They are super easy to make and last about a week. I usually have 1–2 per day, if that. They are filling and taste the best frozen.
This super easy recipe contains 5 ingredients with a total prep time of 15 minutes. This version is healthier because you know the ingredients going into the bars, and we don't add anything extra. Small portions are the perfect dessert!
This recipe was inspired by Healthy Homesteader on Instagram. We did not add sea salt and added less chocolate chips. I also froze mine for longer and noticed a difference when they were in the freezer longer than 15 minutes.

Feel free to customize this recipe. The recipe I made comes as close to the real deal as possible but if you want to swap out the peanut butter for an almond or nut butter, you can do that as well. You can also use white chocolate chips instead of dark chocolate chips.
Ingredients for Chocolate Peanut Butter Bars

- 3/4 cup Unsweetened Creamy Peanut Butter (or any type of peanut butter)
- 1/3 cup honey
- 1 1/2 cups Old Fashioned Oats
- 3/4 cup semi-sweet chocolate chips
- 1 tbsp coconut oil
How to Make Chocolate Peanut Butter Bars
✓ Step #1: Gather a bread pan – Line a loaf or bread pan with parchment paper.
✓ Step #2: Add ingredients to a bowl – In a large bowl or pan, add the peanut butter and honey. Mix to combine.
✓ Step #3: Add in additional ingredients – Add in the rolled oats until fully combined.
✓ Step #4: Press into bread pan – Add the peanut butter mixture to the bread pan and press down firmly, ensuring it covers the full surface evenly.
✓ Step #5: Melt and add the chocolate chips – In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 30-second intervals (stirring in between) for a total of about 90 seconds until smooth. Pour over the peanut butter layer and spread evenly. Freeze for 1 hour.
✓ Step #6: Cut into pieces – Slice into bars of your desired size and enjoy!
Storage Tip
Store leftovers in an airtight container in the freezer for up to one week.
