What Makes This Chicken Alfredo So Unique
Maybe you have had Chicken Alfredo before and it all tastes the same - I'm here to tell you this one will not. Usually you add Parmesan cheese with Chicken Alfredo and, since I was out, I added cheddar cheese and pepper jack cheese. What a huge difference in flavor. The pasta was cheesy, creamy, but still felt really light. There was a slight tang and a slight sweet taste that balanced out the flavor.
What Inspired This Chicken Alfredo Recipe
I actually found this one through Jairdoeshair on Instagram and we made it our own. Here is what we did differently:
✓ We used 1 cup chicken broth instead of 3
✓ 2 cups buttermilk instead of heavy cream
✓ Eliminated salt
✓ We replaced the 2 cups Parmesan cheese with 2 cups Cheddar Cheese and 1/3 cup Pepper Jack
✓ I also added Paprika and Alfredo Sauce
Customizations
Feel free to adapt and make this your own like we did. You can adjust the seasonings based on your preference. If you don't like heat, you can remove the Pepper Jack cheese and crushed red peppers (although I didn't even taste any heat in ours), or add cayenne pepper or Sriracha for a spicier version. You can also experiment with different cheeses as well.

What You Will Need To Make Cheesy Chicken Alfredo

- 2 large chicken breasts, boneless and skinless
- *1 cup chicken broth
- 2 cups buttermilk
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp crushed red pepper
- 1 tsp black pepper
- *4 oz uncooked Fettuccine pasta
- 4 tbsp butter
- 2 cups cheddar cheese
- 1/3 cup Pepper Jack cheese
- *1/3 cup Alfredo sauce
- 1 tsp paprika
Note: If you want to add cream cheese to make it creamier, you can add that as well (4–8oz depending on your preference) and you will add that to the top of the chicken in step two.
Directions For Slow Cooker Alfredo
✓ Step #1: Prepare your slow cooker - Spray a slow cooker with PAM or cooking spray. Turn your slow cooker on high. Add your chicken breasts, buttermilk, and seasonings (garlic powder, Italian seasoning, pepper, crushed red pepper - I added paprika at the very end).
✓ Step #2: Add butter and cheese - Cut your butter into squares (or scoops if you are using the container of butter) and add to the top of the chicken. Top with half of the shredded cheese. Do not stir. Put the lid on and let it cook for 4-5 hours on high, stirring every few hours.✓ Step #3: Stir and add pasta – After 4-5 hours, the chicken should be tender (not quite fully cooked) and ready to fall apart. You can use two forks in the crockpot and allow it to fall apart into shreds.
Add the pasta noodles to the slow cooker. I broke the pasta noodles in half, but you can choose to leave them whole as well and push them down. Cook for 45-60 minutes longer or until pasta is soft and chicken is cooked all the way.
✓ Step #4: Add more seasonings and cheese: After 45-60 minutes, top with seasonings of your choice (I topped ours with paprika, Italian seasoning, and more black pepper) and the remainder cheese. Stir and let cheese melt, 10 minutes.
How to Store and Reheat Leftovers
If you have leftovers, store them in an airtight plastic container and keep in the fridge for up to four days. Warm it up in the microwave and serve.
