If you are looking for a fried chicken recipe that is not only addictive, but crunchy, simple, and flavorful, look no further than this Raising Cane's Copycat recipe. The best part about copycat recipes is you can make them from the comfort of your own home without the high cost and all of the extra ingredients.
Believe it or not, I have never had Raising Cane's Chicken but I knew my son had. I asked Jace to try it. He asked me, "Are you sure you didn't go buy the chicken and then pretend like you made it?" and I'll take that as the biggest compliment when it comes to a copycat meal.
For best results, you will want to marinade the chicken overnight so keep that in mind when you are making this recipe.

This recipe has simple ingredients but brings in a load of flavor. It's also double battered for an extra crispy outside layer. The chicken is super crunchy, the meat is soft and tender, I kept going back for seconds and thirds.
With less than ten ingredients (most of which you probably already have in your pantry), you can't go wrong with a delicious copycat chicken recipe.
What Inspired This Recipe
I usually find recipes either in my email inbox or just browsing social media. This one caught my eye because the chicken looked delicious and I had never tried Raising Cane's Chicken before. This was inspired by The Recipe Critic and we made changes in measurements, eliminating salt, and marinating the chicken for the full 24 hours.
Tips For Success
- Double battering the batter provides an extra crunch that a single layer doesn't always provide. If you like extra crispy chicken, the double fry is perfect for you.
- Over the years I have cooked (and burned) a lot of chicken. My best advice is, as you add in the vegetable oil, never turn the heat to high (even if you are trying to get it hot and boiling) because it will either burn the chicken immediately or cook the outside while the inside of the chicken is still uncooked. Keep the heat around medium, wait 3-5 minutes, flick some water on the oil and once it sizzles, you are good to go.
- Marinating for the full 24 hours allows the flavors to soak into the chicken overnight.

Ingredients For the Chicken

- 4 thin boneless, skinless chicken breasts
- 4-5 cups of vegetable oil
Ingredients For the Marinade
- 2 cups cultured buttermilk
- 1 tsp ground pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- *1 tsp smoked paprika
Ingredients For the Breading
- *2 1/4 cups flour (this is a reasonable price on Amazon)
- 3/4 cup cornstarch
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
Note: For perfectly browned chicken, turn the stove to medium heat or a little higher. If you turn the heat on high heat, it will burn the chicken almost immediately.
✓ Step #1: Add your marinade to a bowl - In a bowl, add the buttermilk. In the same bowl, combine the buttermilk, pepper, onion powder, garlic powder and paprika. Whisk together.
✓ Step #2: Add chicken slices to same bowl - Get a cutting board and slice your chicken, removing any fat. I purchased the thin boneless, skinless pieces of chicken so they were fairly simple to cut. Add them to the same marinade bowl and stir again until everything is combined.
✓ Step #3: Marinate for 24 hours – Top the bowl with aluminum foil and store in the fridge for up to 24 hours.
✓ Step #4: Mix the breading - After the 24 hours is up and you are ready to fry the chicken, take the chicken out of the fridge and start putting together your breading ingredients. In a bowl, combine the flour, cornstarch, pepper, onion powder, garlic powder and paprika. Stir to combine.
Fry each side for about 2-3 minutes, keeping an eye on it so it doesn't burn.
How To Store
Add leftovers to an airtight, sealed container, and store in the fridge for up to 4 days.
