Double Baked Sweet Potatoes with Chicken
I have always treated sweet potatoes as more of a dessert or snack, but this Double Baked Sweet Potatoes with Chicken recipe completely changed that. The combination of adobo sauce, Italian seasoning, melty cheese, and flavorful chicken balances the sweetness perfectly - it was an unexpected combination I didn’t know I needed.
Jace wanted baked potatoes, so I made both sweet and regular baked potatoes - but this version with sweet potatoes was my favorite.
The inside of the sweet potato is soft with a hint of spice from the adobo, filling from the starch, and packed with flavor from the seasonings. It was truly unlike anything I had tried before. If you enjoy unique recipes and are open to trying something new, this recipe is for you.
These are considered “double baked” because the potatoes are baked once until tender, then filled, topped, and baked again until melted and golden.

What Makes This Recipe Unique
This recipe is unique because I have never had sweet potatoes and chicken in the same meal. I never thought to include something sweet with something savory for a dinner recipe. You can apply the same step-by-step directions for both a sweet potato and baked potato. Although I liked the sweet potato better, the outer peel was sturdier on the baked potatoes. I cut the sweet potato in fourths and could have cut it just in half to maintain the entire peel.
What Inspired This Recipe
I saw this recipe in my email and thought it would be a fun and unique dinner. I also thought it would not be too complicated, yet filling. With dinners just being Jace (my teen) and myself, it was a simple recipe that we both enjoyed.
This recipe was from Clean Food Crush. We did not use red pepper flakes as it was already hot or mild enough with the Adobo. The Adobo sauce was from a can of Chipotles Peppers in Adobo Sauce and I removed the sauce with a measuring spoon. We replaced oregano with Italian seasoning, we eliminated the salt, and used small boneless, skinless chicken breast pieces instead of ground chicken.

• *2 tbsp olive oil
• *4 tbsp adobo sauce (from canned chipotle peppers)
• 1 tsp Italian seasoning
• 1/4 tsp black pepper
• 1 large boneless, skinless chicken breast, cut into tiny pieces
• 1/3 cup your choice of cheese (we used shredded mozzarella)
Note: For baking, we use the Cuisinart toaster oven so baking times may vary.
How to Make These Double Baked Sweet Potatoes
✓ Step #1: Cook your potatoes – Add your potatoes to an oven-safe pan. Poke holes throughout the potatoes and roast them at 375 degrees F for 40 minutes, or until tender.
✓ Step #2: Cook chicken - While the potatoes are roasting, start cooking your chicken. In a pan on medium heat, add the olive oil and brown the chicken about 4-5 minutes. Stir in the adobo and pepper and cook 1-2 more minutes. Set aside.
Cut the potatoes length-wise, remove the potato pulp (I use a spoon but an ice cream scoop will also work), add it to a bowl along with the cheese, Italian seasoning and if you want to add more adobo sauce (if you want them spicier), you can also add it to the bowl as well. Mix to combine.
Note: I did this with both the baked potato and sweet potato so I have two different bowls.
✓ Step #4: Fill the potatoes - Fill the potatoes back with the potato pulp mixture and top with more cheese if you would like.
How To Store
Add leftovers to an airtight, sealed container, and store in the fridge for up to 3 days. Reheat in the toaster oven.
