What Makes This Sweet Potato Taco Bowl So Unique?
I was looking for a recipe that was not just healthier, but also one that included my favorite type of food - tacos. I was looking for healthier alternatives and I've heard a lot about sweet potatoes and how nutritious they are for you. This bowl is easy to create, it takes less than 35 minutes, and it's not often that you can combine your favorite taco ingredients with sweet potatoes and it turns out to be a delicious meal.
What Inspired This Taco Bowl?
I was looking through recipes and found one that used sweet potatoes in their taco bowls. I thought it was very creative and decided to add my own flair to it. Not only did I roast the potatoes, but I added olive oil, onion powder and garlic powder. I also purchased a huge bag of sweet potatoes to try and use them in different ways so I was inspired to create something that I know I would like while also using sweet potatoes in a way that I normally don't use them.
Why This Sweet Potato Taco Bowl Recipe Works
I work at night so my meals are typically more on the simple side. You can add each ingredient in a small container, take it with you on-the-go and then reheat the potatoes so it's more of a dump-and-go recipe. You can also make it at home and you can even include it in a weekly meal prep. Once the potatoes are roasted, you can save them for later and reheat them in the microwave or air fryer.
What I Would Do Differently Next Time
When I make this again (because I will), I want to try adding smoked paprika to the sweet potatoes. When I make roasted potatoes, I usually use smoked paprika and dried dill. I was out of paprika so I only used olive oil, garlic powder and onion powder which still tasted phenomenal. I also would love to try this with shredded lettuce. I didn't have any so I just used taco ingredients that I had at the time.

You don't have to. Once everything is combined together, the potatoes can be super flavorful depending on the ingredients you use.
How long do I roast the potatoes for?
Mine were done in about 20–25 minutes because I used one diced sweet potato, but allow 25–35 minutes depending on cube size and how many you're roasting.
Can I use different seasonings?
Absolutely. This recipe can be adjusted to your liking or your family's liking. Feel free to use whatever seasonings make sense for you. I use garlic powder and onion powder on everything so those are the ones I chose for the sweet potatoes.

• 1-2 sweet potatoes (you can do more if you would like to meal prep)
• 1 pound ground beef
• 1 packet taco seasoning
• Shredded cheese
• Sour cream
• 2 tsp garlic powder
• 2 tsp onion powder
• 2 tbsp olive oil (after using olive oil in a squeeze bottle, I will never go back go anything else)
• Salsa
Note: This taco bowl is fully customizable to your taste. Feel free to add diced tomatoes, shredded lettuce, or black olives.
How to Make Sweet Potato Taco Bowls
✓ Step #2: Add sweet potatoes to oven - Roast the sweet potatoes for 25-35 minutes, flipping halfway. If you only use 1-2 sweet potatoes, they may be done sooner. If you want to cook more to meal prep, keep an eye on them and remove them once they are caramelized how you would like.
✓ Step #3: Cook ground beef - While the sweet potatoes are roasting, cook the ground beef on the stove. I make this like I normally do for tacos. I added olive oil (you can also substitute with PAM cooking spray) in a pan, added the ground beef and cooked it until it is no longer pink, about 5-7 minutes.
Add in the taco seasoning and 1/3 cup water. Boil and then turn down the heat to low and let it cook for about 5 minutes, stirring every few minutes. Set aside.
✓ Step #5: Combine ingredients and serve - Mix together your taco bowl and eat immediately. Enjoy!
How to Store and Reheat
If you have leftovers, I would recommend storing the ground beef and sweet potatoes separately. When ready to eat, reheat the ground beef in the microwave. The sweet potatoes can be reheated in a microwave or air fryer for an added crispy layer.
