No-Bake Butterscotch Bars
If you are looking for a dessert that is full of flavor, yet light and not super rich, this is the dessert you want to make. These no-bake butterscotch bars are, as Jace put it, "Crunchy, flavorful, and chocolately. There's a lot of things going on in my mouth right now."
This recipe combines the sweetness of biscoff cookie butter with the light rice crispy treat cereal, a butterscotch pudding mix for flavoring, and crunchy Butterfinger bars.

What Makes These Butterscotch Bars Different
One bite and you will fall in love. These bars are so addicting, you may not even realize that you are reaching for another one! These bars aren't super sweet - even though there are a lot of "sweet" ingredients in it. They were rather messy and ooey gooey, but with the combination of chocolate, butterscotch, and Butterfinger, you can't go wrong.
The first layer is full of crunchy cereal, melted sugar and corn syrup, followed by a melted layer of butterscotch pudding, milk, powdered sugar, and Butterfinger treats. The top layer is smooth chocolate and butter that freezes so well together. Is this the healthiest dessert recipe I've made? No. Is it hard to eat them in moderation? Yes. Would I still make them again? Absolutely.
What Inspired This Dish
With my employment being so up and down, I have made the decision to focus more on homemade meals and treats rather than eating out. Since I cook more than I bake, I chose a no-bake dessert, something that the entire family would love. This recipe was inspired by Better Homes & Gardens and we made this recipe our own and adapted it to our family needs.
I added biscoff and used one package of butterscotch pudding and pie mix instead of two.
Helpful Tips
Recommended: Use a large pan for the top layer ingredients. Use a medium pan for the middle layer and small pan for chocolate chips and butter. You also want a large baking pan (not a bread pan) for storing it in the fridge.

Ingredients for No-Bake Butterscotch Bars - What You Will Need

- *1 cup sugar (or *Monkfruit - a white sugar substitute for a healthier alternative)
- 1 cup light corn syrup
- 1 cup peanut butter (any kind)
- *1 cup biscoff cookie butter
- *3 cups Rice Krispies Treat Cereal
- 3 cups organic corn flakes
- 3/4 cup butter + 1/3 cup butter
- 4 cups powdered sugar
- *1 package butterscotch pudding and filling mix
- 3 fun size butterfingers
- 1/3 cup milk
- 8 oz chocolate chips
Here's How to Make Butterscotch Bars
✓ Step #1: Prepare a pan for the bars - Prepare a large baking pan by adding a layer of aluminum foil and spraying it with a butter spray. Set aside.
Note: I used a bread pan and did mine in two separate batches. If you have a large pan, I would suggest starting out with that and make the entire batch in one.

Step #4: Add mixture to pan – Add mixture to the bottom of the bread pan (or large baking pan) and press down with a spoon or your hand until it's completely even.

Step #5: Make the filling: In a medium pan on the stove, add 3/4 cup butter over medium heat and stir in the powdered sugar, pudding mix, crumbled butterfingers and milk. Spread mixture over cereal layer and set aside.
Note: If you add the Butterfinger bars to a freezer bag, you can use a rolling pin to crumble the bars.
Storage & Freeze Tips for Butterscotch Bars
Store bars in an airtight plastic container and keep in the freezer for up to 7 days. I went through about 8 bars in 7 days and they tasted amazing straight from the freezer.
