No-Bake Candy Cane Cookie Dough Protein Bark
Who says candy cane only has to be used during the holidays? This sweet treat is not only easy to make, but a little nostalgic. It tastes like Christmas memories alongside cookie dough with added protein powder and chocolate chips for energy. With very few ingredients, this recipe has been on repeat in our household and hopefully you enjoy it as much as we did.
I have made no-bake bark before, but not with healthier ingredients and a cookie dough-style base topped with candy cane finishing sugar. Unlike traditional bark, this version stays soft and doughy when frozen rather than brittle, making it easy to break into snack-sized pieces.

What Inspired This Recipe
I saw a version of this recipe on Instagram and decided to make my own using ingredients I already had, including collagen protein, almond flour, and candy cane finishing sugar for a seasonal twist.
Why This Protein Snack Works
This no-bake protein bark works especially well because it combines fat, protein, and a small amount of sweetness, which helps keep energy levels stable without feeling heavy. The almond flour creates a soft, dough-like base, while the coconut oil helps the bark firm up when frozen.
Using collagen protein keeps the texture smooth rather than gritty, which can sometimes happen with whey or plant-based powders. The melted chocolate layer adds structure and helps the bark hold its shape when broken into pieces. The chocolate also helps with an energy boost along with a layer of sweetness.
When To Eat This Protein Bark
This protein bark is best eaten within 24-48 hours - before or after a workout, used as an afternoon pick-me-up, or after dinner as a protein "midnight snack" when you want something filling and sweet. Because it contains protein and fat, it's more satisfying than traditional candy bark. The trick is to just eat one piece at a time or you may find yourself eating the entire batch.
I don't recommend this recipe for young children due to the protein powder and sugar substitutes, but it is a great option for adults looking for a quick snack that doesn't require baking or cleanup.

The great thing about this bark is you can customize it to your liking. Depending on your palette, you can top with sprinkles, almonds, white chocolate chips, or, instead of finishing sugar, you can crush candy canes and top throughout the bark.

Ingredients For Cookie Dough Protein Bark

• *1/2 cup Orgain Keto Collagen - Vanilla
• 1/2 cup Almond flour
• *1/4 cup Sugar Free Maple Syrup (You can substitute honey or maple syrup if not using sugar-free syrup.)
• 1/4 cup melted coconut oil
• 3/4 cup melted semi-sweet chocolate chips
• *McCormick Candy Cane Finishing Sugar
Note: I recommend using almond flour rather than almond meal for a smoother, cookie dough-like texture. If your protein powder is thicker or sweeter, you may need to slightly adjust the syrup to keep the dough soft and pressable.
✓ Step #1: Combine your ingredients – In a bowl, combine the protein powder, almond flour, syrup, and melted coconut oil together and press down onto a PAM-sprayed pan or onto parchment paper. I put mine in a heart shape since it's almost Valentine’s Day.
✓ Step #2: Freeze and add chocolate - Freeze for 10 minutes. While it's freezing, melt the chocolate chips in the microwave - 30 seconds at a time, stirring in between. Spread the chocolate onto the hardened dough.How To Store
