What Makes This Almond Joy Recipe Unique?

For one, I did not think I could make an Almond Joy recipe using pitted dates. I did not think the texture or taste would be the same so this completely shocked me. Although messy, this recipe was, overall, simple to make using healthier ingredients. It can be hard to recreate a recipe that tastes the same, yet it uses completely different ingredients than the original. I was fairly surprised at how this no-bake snack turned out.

What Inspired This Recipe?

I love snacking and sometimes I tend to overeat or snack on things that aren't as healthy as I would like for them to be. Making no-bake snacks like this allows me to indulge without feeling like I am overeating.

Why This Recipe Works

This recipe works because it combines naturally sweet dates with a creamy coconut filling and a rich chocolate coating, creating a balanced bite of sweetness, texture, and flavor. Freezing the dates helps firm them up, giving them a candy bar-like consistency while still keeping the ingredients simple and wholesome.

FAQ

Can I use Medjool dates instead of regular pitted dates?
YES absolutely! They work perfectly and can even provide a softer texture.

Can I use dark chocolate?
Dark chocolate adds a rich flavor and reduces sweetness so absolutely. If you aren't so much concerned about the Almond Joy replica, you can also dip in white chocolate.

Can I refrigerate instead of freeze?
Yes but it will be softer. Freezing it allows it to have that candy bar firmness.

How to Make Almond Joy Dates

✓ Step #1: Prepare the pitted dates - On a plate, lay out up to 15 pitted dates - open them up so you can fill them.

✓ Step #2: Prepare the mixture - In a bowl, combine the coconut whip, coconut shreds, and maple syrup until all the way combined. Add the mixture to the center of each date. Freeze for 15-30 minutes.

✓ Step #3: Dip in chocolate - While the dates are in the freezer, melt the chocolate. Add the chocolate chips to the microwave and melt in 40-second increments until completely melted. This is where it gets messy - take each date and dip half of it in the chocolate mixture. Add back to the plate and top with an almond.

✓ Step #4: Freeze - Continue to freeze for at least an hour before you try them. Store in the freezer for up to 4 days.

How to Store

Store on a plate in the freezer for up to 4 days. You can also store them in a sealed container.
