Air Fryer Turkey Meatballs

Image
Air Fryer Turkey Meatballs After being sick for seven weeks with pneumonia (which actually ended up being GERD), I’ve had more time at home and have been cooking dinner for the family every night. One meal we all enjoyed was Air Fried Turkey Meatballs, inspired by Megane Woldsen on Instagram.  I adapted the recipe to create a healthier, family-friendly spaghetti and meatball dinner using ground turkey instead of ground beef. The Air Fryer gives them a crispy outside while keeping the inside tender.  These meatballs are versatile and can be served with spaghetti, made into kabobs, or placed in a sub sandwich. Ready in just 10 minutes, they’re a quick, healthy dinner everyone will love! •  Difficulty Level:   Easy  •   Serving size:  4 servings •  Total cook time:   10 minutes •  Family friendly:  YES - my son loves meatballs Why You Will Love These Air Fryer Turkey Meatballs Any recipe that uses the Air Fryer is right up my alley. Grilled Korean BBQ Chicken Skewers

Image
Korean BBQ Chicken Skewers You asked for the recipe, so here it is! These grilled Korean BBQ chicken skewers were tangy with a hint of heat, a bit sweet due to brown sugar and sweet chili sauce, and they had a layer of crisp and burnt due to the grilled marinade. They were grilled to perfection.  These skewers are easy to make, but a tad messy. We served ours with a homemade fried rice. Kevin said it tasted like seasoned chicken, I thought the chicken was perfectly tender and full of Korean flavor. •  Difficulty Level:   Easy (but messy) •   Serving size:  We made 5 skewers - enough for 2-3 people •  Total prep and cook time:   30-45 minutes •  Family friendly:  Absolutely, this recipe is a super fun one! •  Estimated calories: Approximately 413 calories per skewer  Why You Will Love These BBQ Chicken Skewers With the weather not consistent lately, we decided to go with an indoor grill which we have used several times. How to Make Hot Honey Sauce – Sweet, Spicy & Perfect for Dipping

Image
Quick Hot Honey Sauce Recipe I made this easy hot honey sauce recipe on a whim, completely made it up, and Jace rated it a 30/10. This sauce was perfect with chicken tenders and we added ours to a sandwich. You can also use it as a dressing or a dip. I'm not a huge fan of heat, but this sauce hit the spot. Easy Baked Chicken Tacos: A Quick & Delicious Recipe for Busy Nights

Image
Easy Baked Chicken Tacos To me, baked chicken tacos are an upscale version of regular tacos. They are crunchy, the chicken is tender, the taco seasoning and sour cream combine together to make it flavorful and creamy, and with only six main ingredients, this will be one of the easiest taco dinners you will make.  I cooked the chicken and taco seasoning in a crockpot in the late morning, and by dinnertime, the tacos were ready to assemble. I rated these tacos a 9/10 and Jace rated them an 8.5/10. We are huge taco fans around here! •  Family-Friendly:  Yes, my teen and I thoroughly enjoyed them •  Difficulty Level:  Easy •  Best Topped With: I topped mine with more light sour cream and lettuce for a refreshing taste. You can also add taco sauce, avocado, or guacamole. Serve with a side of black beans or Spanish rice for a complete meal •  Estimated Calories:  396 calories per two tacos •   Serving size: This recipe made 6 tacos •  T...

Easy and Flaky Beef Empanadas Recipe | Quick & Delicious Mexican Dinner

Image
Easy and Flaky Beef Empanadas Recipe If you know me, you know I love cooking, but I also tend to lean towards recipes that involve minimal ingredients and time. Between working part-time, blogging, looking for more work, and taking care of the household, that in itself is a full-time job.  I made these beef empanadas the other day for two reasons - one, I love Mexican food (and I'm 19% Mexican so I claim it when I can) and two, it was fairly simple with less than 10 ingredients.  14-year old Jace said he was surprised that he liked this Mexican-inspired recipe so much and I had 1.5 servings if that tells you anything about how much I enjoyed them.  •  Family-Friendly:  Yes, my teen and I thoroughly enjoyed them •  Difficulty Level:  Easy/Intermediate •  Best Served With:  I topped mine with sour cre...
