You asked for the recipe, so here it is! These grilled Korean BBQ chicken skewers were tangy with a hint of heat, a bit sweet due to brown sugar and sweet chili sauce, and they had a layer of crisp and burnt due to the grilled marinade. They were grilled to perfection.

These skewers are easy to make, but a tad messy. We served ours with a homemade fried rice. Kevin said it tasted like seasoned chicken, I thought the chicken was perfectly tender and full of Korean flavor.

Why You Will Love These BBQ Chicken Skewers

With the weather not consistent lately, we decided to go with an indoor grill which we have used several times. It worked so well, providing grill marks so it tastes like the real deal, it didn't take too long to grill, and it tasted perfect. They were fairly easy to make, just a tad messy, I made a few substitutions and the flavors worked really well together.

The flavors combined together really well and make a sauce that is not too spicy and not too sweet. I added a rice seasoning for the acid, a brown sugar for sweetness, oyster sauce for a strong flavor, and sweet chili sauce and gochujang for a sweet but spicy kick.

How to Store Korean BBQ Chicken Skewers

Take the chicken off leftover skewers and store in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 2 minutes or until warm.

Recipe Inspiration

This recipe was inspired by Spiceology and I found it while late-night scrolling. We love grilled chicken and Korean cuisine, so I thought I would give this a try. I used a Korean BBQ Seasoning from Amazon instead of the Spiceology blend.

Instead of hot chili paste, I used a combination of Gochujang and Panda Express Sweet Chili Sauce. I swapped out fish sauce for oyster sauce and used ground ginger instead of peeled ginger.

Kevin didn’t want green onions, so we eliminated those and made homemade fried rice instead of jasmine rice.

  • 1/2 cup sweet cooking rice seasoning
  • 1/2 cup organic light brown sugar
  • 1/4 cup Korean BBQ Kick seasoning mix
  • 2 tsp ground ginger
  • 1/4 cup oyster sauce
  • 1/3 cup gochujang sauce
  • 1/8 cup Panda Express sweet chili sauce
  • 2 large chicken breasts (cut in half horizontally, then into chunks)

How to Make Korean BBQ Chicken Skewers (Step-by-Step)

✓ Step #1 Prepare the sauce: In a large saucepan, combine the Korean BBQ blend, brown sugar, rice seasoning, gochujang and sweet chili sauce, oyster sauce, and ginger. Whisk until combined.

✓ Step #2 Let the chicken soak: Cut the chicken into chunks and add to the sauce. Let the chicken sit in the sauce for a few minutes.

✓ Step #3 Thread the chicken: Take the chicken pieces out of the sauce with your fingers and add them to the skewers, up to 10 chicken pieces per skewer.

✓ Step #4 Boil your sauce: On the stove, bring the remaining marinade sauce to a boil, reduce heat and simmer for 7–10 minutes. With 2–3 minutes left, prepare your grill (step #5).

✓ Step #5 Prepare the grill: If you have an indoor grill like I do, fill the tray with water to the minimum line, add it below the grill and turn it on to medium-high heat.

✓ Step #6 Grill your chicken: Spray the grill with PAM and add the chicken skewers. Cook for about 15–20 minutes, flipping often and basting them each time with the reduced marinade.

✓ Step #7 Serve: Add the skewers to a plate and serve with homemade fried rice, roasted vegetables, white rice, garlic bread, or your favorite sides.
