You can easily make this recipe gluten-free by swapping the Fusilli noodles for your favorite gluten-free pasta. Want a creamier sauce? Try adding a bit more butter or milk as needed!
This mac and cheese recipe is rich and indulgent, but if you’re looking to make it a bit lighter, consider using a reduced-fat version of the cheese or using unsweetened almond milk in place of regular milk.
We made quite a few changes from the original recipe from Lil Luna, including using Fusilli noodles, plant-based butter, no added salt (I don't ever add salt in our recipes), a combined Parmesan & Romano cheese blend, sharp cheddar instead of medium, and more milk instead of half & half.

How to Make Copycat Chick-Fil-A Mac and Cheese:
✓ Step #1: Boil water – Preheat oven to 350°F. In a large pot, bring water to a boil to prepare the pasta.
✓ Step #2: Cook pasta – Add Fusilli pasta to the boiling water and cook for 9 minutes. Drain, then return to the pot and mix with 1 tbsp butter.
✓ Step #3: Prep the cheese – In a medium bowl, combine 1½ cups sharp cheddar, 1½ cups white cheddar, and 1 cup Parmesan & Romano cheese blend.
Note: Reserve 1 cup of cheese for topping later.
✓ Step #4: Make a roux – In a large skillet over medium heat, melt the remaining 5 tbsp butter. Stir frequently to avoid burning. Once melted, whisk in the flour to form a smooth paste.
✓ Step #5: Add milk & cheese – Gradually whisk in the milk. Stir continuously for 5–6 minutes, then reduce to low heat and whisk in the cheese mixture until smooth.
Note: Whisk constantly to avoid clumps as the cheese melts.
✓ Step #6: Combine with pasta – Pour the cheese sauce into the cooked pasta and mix to coat evenly. Add pepper to taste. If the sauce feels too thick, add a splash of milk.
✓ Step #7: Transfer & top – Pour the mixture into a PAM-sprayed baking pan and top with the reserved 1 cup of cheese.
✓ Step #8: Bake and serve – Bake for 15 minutes or until cheese is bubbly. Let rest for 5 minutes before serving.
