The gravy has a sweet undertone from the apple cider vinegar and the beef tips were cooked just perfectly. If you want it more like a soup where you can taste the gravy but it's not thick, you can cook it for an hour. If you want a thick gravy, you can cook it for 1.5–2 hours.

Meals that require more effort seem to be loved and valued the most. This recipe required patience and time, but the end result was worth it. With tender and soft beef tips, a savory and sweet gravy, and buttery soft noodles, you really can't go wrong!

What Makes This Recipe Different?

Usually I’m all for quick recipes because weekdays can be pretty busy. But this one required a few hours of slow cooking — and it paid off! You could truly taste the comfort in each bite.

This isn’t just another beef tips recipe — the combination of red wine vinegar, Worcestershire, soy sauce, and spices gave it an ultra-rich flavor that felt special and homemade.

Inspiration

This recipe was inspired by Insanely Good Recipes. We swapped ingredients out based on our preferences — I used oat flour instead of all-purpose, red wine vinegar instead of red wine, and eliminated both the tomato paste and fresh parsley.

I was looking for something comforting and different from our usual weeknight meals. This one checked all the boxes and turned out to be a family favorite.

How to Store and Reheat Beef Tips and Egg Noodles

Beef tips are best eaten immediately, otherwise they may dry out. If you leave the beef tips in with the gravy, you can store them in the fridge in an airtight container for up to 3–4 days.

Adjust to Your Liking

  • Use all-purpose flour instead of oat flour
  • Cook longer for a thicker, creamier gravy
  • Use your choice of noodles, although egg noodles worked perfectly for us
  • Use onions and garlic instead of powder like we did
  • Use different seasonings and adjust to your flavor palette

  • 2 pounds stew meat
  • 1 tsp black pepper
  • 2 tbsp oat flour
  • 2 tbsp olive oil
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/2 cup red wine vinegar
  • 1 cup beef broth
  • 1 1/2 cups water
  • 2 tbsp Worcestershire sauce
  • 2 tbsp low sodium soy sauce
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 bay leaf

  • 12 oz wide egg noodles

How to Make Beef Tips and Egg Noodles (Step-by-Step)

Step #1: Cook the noodles – Start cooking the noodles according to the package instructions. Move to step two while the pasta is cooking. Once the pasta is done, drain.

Step #2: Cook the beef tips – While the pasta is cooking, start cooking the beef. Pat the beef tips dry with paper towels, season with pepper, and coat lightly with flour.

Heat the olive oil in a skillet over medium-high heat. Add the beef tips without overcrowding the pan (I had to do two batches) and sear both sides, about 2–4 minutes per side. Remove from heat and set aside.

Step #3: Add onion and garlic powder – In the same pan, add 1 tbsp olive oil with onion powder and garlic powder. Stir for about 10–20 seconds (don't let it burn).

Step #4: Add in the remaining ingredients – Pour in the red wine vinegar, scraping up any browned bits from the seasonings. Add the beef broth, water, Worcestershire sauce, soy sauce, Italian seasoning, paprika, and bay leaf. Bring to a simmer.

Step #5: Simmer – Return the beef tips to the pan, reduce heat to low and cover. Simmer for 1 hour (for a “soup”) or 2 hours for a thick gravy, stirring occasionally.

Step #6: Serve on top of egg noodles – Serve the gravy and beef tips on top of the egg noodles. Top with more Italian seasoning and pepper if desired.
