Buffalo Chicken Taquitos

Our oven has been out of commission most of this year so we have been focused primarily on air fryer and stovetop recipes. I was craving taquitos so the family agreed on buffalo chicken taquitos. The buffalo sauce has a kick to it but it's balanced out with cream cheese and melty cheddar cheese. These taquitos are packed with flavor from the taco seasoning spices, garlic powder, black pepper, and chicken broth. It will be impossible to have just one.

Why You Will Love This Chicken Taquito Recipe

This recipe is truly unique. The chicken is soft, juicy and tender. Olive oil is used on top of the tortillas to give the tortilla a nice and flaky crust. If you like spice and heat, this will be the recipe you will want to try. I used 8 oz of buffalo sauce - if you want less heat, feel free to use less sauce or more cream cheese. Using the air fryer gives it a layer of crisp without having to fry it. Remove extra calories and enjoy a light, flaky, and crispy taquito! 

Pro Tip

• If you don't want to take the time to slow cook the chicken, you can always use rotisserie chicken instead
• If you don't want a lot of heat, you can decrease the amount of buffalo sauce and increase the amount of cream cheese
• We used homemade style tortillas - not traditional corn. I find that corn tortillas have a hard time staying rolled up so I went for a small tortilla that wasn't flimsy
• If you want more heat, you can increase the amount of buffalo sauce or add cayenne pepper or red pepper flakes to the slow cooker

Inspiration

I looked at a few buffalo chicken taquito recipes but ultimately came up with my own version. This version combines the crockpot and the air fryer. If you have time to slow cook the chicken, I strongly suggest doing it. Combining all ingredients in a slow cooker and letting it sit and blend together for hours on end allows the cheeses to be creamy and the chicken to be nice and tender.

How to Store

If you have leftovers (which we didn't), you can store them in an airtight container in the fridge for up to 4 days. Reheat in the microwave, in the air fryer, or on the stovetop.

How to Make Buffalo Chicken Taquitos

✓ Step #1: Add chicken to slow cooker - In a slow cooker, add chicken breast, chicken broth, pepper and garlic powder. Cook on high for 3 hours. Shred chicken using two forks.

✓ Step #2: Add ingredients - Once the chicken is shredded, add the other ingredients. Add the buffalo sauce, cream cheese, and taco seasoning. Stir to combine and cook for 1-2 more hours on low.

✓ Step #3: Add chicken mixture to tortillas – Add chicken mixture to the middle of a tortilla and top with shredded cheese.

✓ Step #4: Add to the air fryer – Roll each taquito up and add to the air fryer. Top with olive oil and cook at 400 degrees, 9 minutes. If you want to flip them over after 9 minutes and cook for another 3-4 minutes, you can do that as well.

✓ Step #5: Serve – Remove from air fryer onto a platter and serve with a side of sour cream and taco sauce.
